Lo Pare

Lo Pare is a wine that speaks of land, legacy, and identity. Its name, meaning “the father” in Catalan, pays tribute to the figure that conveys experience, strength, and deep roots. Within the story of Celler Pascona, it represents the solidity of a family project that grows without losing its connection to the land.
The blend of Garnacha Negra and Cabernet Sauvignon is deliberate. Garnacha Negra embodies the Mediterranean soul, warm and generous, while Cabernet Sauvignon contributes firmness, structure, and longevity. Both varieties come from very old vines, cultivated with care on the estate’s llicorella soils. This type of slate soil, typical of Priorat and its surroundings, lends the wine a distinctive mineral edge, an austere elegance, and a sense of place.
Although Lo Pare is powerful and structured, it never abandons freshness. One of its greatest achievements is maintaining natural acidity, which balances the wine’s body and extends its length on the palate. This tension between power and freshness results in a complete and flavorful red with notable aging potential.
Production is extremely limited, with only 600 to 900 bottles made each year. This allows for an almost artisanal approach, where every step of the process is carefully monitored. Lo Pare is an ideal match for intense dishes such as traditional stews, grilled or roasted red meats, game, or aged cheeses. It is also a wine to cellar, to open slowly, and to let tell its story. A Montsant red that, without renouncing strength, also reveals sensitivity and depth.

PRODUCTION METHOD
Lo Pare is made from a carefully balanced blend of Garnacha Negra and Cabernet Sauvignon, both sourced from very old vines rooted in the llicorella slate soils of Montsant. These low-yielding vineyards are farmed with meticulous care, ensuring each grape reaches perfect ripeness while retaining natural acidity. The harvest is carried out entirely by hand. Grapes are destemmed and fermented separately in stainless steel tanks at controlled temperatures to preserve varietal purity and terroir character. The final blend is made after each component has fully expressed its personality.
AGING
Aged for 15 months in French oak barrels, which provide structure, depth, and subtle spice while respecting the fruit.
TASTING NOTE
Lo Pare shows a deep cardinal red color with vivid purple tones. Aromas of ripe blackberries, raspberries, and strawberry preserves are interwoven with notes of candied pepper, subtle smokiness, and gentle oak. The palate is powerful yet balanced, with velvety tannins and an underlying freshness that gives length and elegance to the finish.
