De rijping van Spaanse wijn bepaalt de classificatie, structuur en commerci\u00eble timing. Van jonge wijnen die vroeg worden gebotteld tot lang gerijpte gran reservas die na vijf jaar worden uitgebracht, rijping be\u00efnvloedt de prijs en de wettelijke status. Maar ondanks de gebruikelijke labels, vari\u00ebren de rijpingseisen vaak aanzienlijk van de ene DO tot de andere.
