Celler Pascona: Authenticity and Terroir at the Heart of Montsant
In the quiet Fontanals Valley, just outside Falset, Celler Pascona stands as a small but powerful voice in Montsant. Run by Toni Ripoll and his family, the estate has evolved through generations with one clear purpose: to craft wines that reveal the essence of the land. Each vineyard, slope and soil carries its own story, and Pascona's mission has always been to let those stories speak clearly, without interference.
A Mosaic of Soils that Defines Montsant
Montsant is a landscape of striking diversity, and Pascona mirrors that richness in every parcel it cultivates. The vineyards rest on three main types of soil: 60 percent clay, 30 percent granite and 10 percent slate, known locally as llicorella. Clay lends depth and body, granite adds freshness and aromatic lift, while slate brings structure and mineral precision. Together, they form a living mosaic that shapes the identity of the estate's wines. Each soil teaches the grower something different, and Pascona listens closely to every lesson.
One Soil, One Voice
At Celler Pascona, one guiding idea defines the entire philosophy: grapes can be blended, but soils cannot. Each wine represents a single terroir, expressing the unique dialogue between variety and earth. The clay wines are generous and full, the granite ones bright and elegant, and the slate cuvées profound and complex. This approach is unusual in Montsant, where most wines blend soils to seek balance. Pascona does the opposite, allowing the land itself to define the balance. The result is a collection that speaks directly of place, sunlight, and the human touch that shapes it.
Working with Nature
Sustainability is not a slogan here but a way of life. Vineyard work follows the rhythm of the seasons, with every task carried out by hand. The family times harvests carefully, looking for perfect ripeness and natural harmony. In the cellar, intervention remains minimal to preserve the purity of the fruit. Fermentations rely on native yeasts, and oak aging is measured, never dominant. By respecting both vineyard and ecosystem, the estate ensures that every wine carries not only its soil's imprint but also the authenticity that defines the Pascona DNA.
Wines with Depth and Identity
The range covers a wide spectrum, from vibrant young reds full of fruit and freshness to refined crianzas and structured wines made for long cellaring. Each bottle reflects a precise moment in the vineyard and a clear sense of purpose. Some wines are meant for immediate enjoyment, while others reveal their character slowly over time. Yet all of them remain true to the same principle: wines with origin, identity and soul. They are the pure voice of Montsant, expressed through the patience and conviction of a family who understands its land.
