Cor de Granit represents the most sober and elegant expression of Celler Pascona’s work with Garnacha Blanca. Its name, meaning “heart of granite” in Catalan, evokes both inner strength and mineral origin. This is not just a metaphor; the grapes come from vineyards planted on granite soils in the Vall dels Fontanals, a secluded valley where the rock itself leaves a clear imprint on the wine.
In this part of Montsant, the temperature difference between day and night allows for slow, balanced ripening. The result is a white wine that unites depth and precision, volume and verticality. Its aromatic profile evolves in the glass, moving from white flowers to stone fruit, with a discreetly saline note that recalls its mineral roots.
Cor de Granit does not seek to impress through exuberance but through purity. The five months spent in French oak barrels add texture and breadth while keeping the essence of the grape and the terroir intact. Everything about this wine speaks of place, variety, and respect for the process.
It is a wine that invites gastronomy, unhurried time, and good conversation. And it carries a personal, intimate detail: if you turn the word “Cor,” it becomes “Roc,” the name of one of the family’s children. A small tribute that connects the land, the wine, and the people who make it possible.
