PRODUCTION METHOD

This wine is sourced from a small plot of Macabeo vines over 75 years old, where naturally low yields deliver concentration and character. Harvest timing is key, ensuring balance between ripeness and freshness while preserving the vineyard identity. Fermentation takes place with the skins for around twenty days, following the traditional brisat style. This technique enhances structure and depth, giving the wine a more gastronomic profile. After fermentation, the wine is transferred into French oak casks and kept on its lees, naturally building texture and stability.

AGING

Aged for 10 to 12 months in French oak barrels with regular bâtonnage, adding texture, integration, and depth.

TASTING NOTE

Soft golden yellow in color. The nose shows dried nuts and herbal notes. On the palate, it is intense and structured, with a subtle bitterness that lengthens the finish. Long, rounded, and highly food-friendly.
