S’Àmfora Mudèfer Negre
S’Àmfora Mudèfer Negre is a very limited-production red wine born from the oldest vineyards of Celler La Botera, situated between 400 and 550 metres above sea level in Terra Alta. The plots lie in valleys surrounded by forests and are cultivated on natural terraces of “panal” soils, which are deep, calcareous and permeable. Thanks to a dry climate, with annual rainfall rarely exceeding 400 millimetres, the vines grow in conditions that favour healthy, low-intervention viticulture.
Comprising 75 percent Cariñena and 25 percent Garnacha Negra, the grapes are harvested and carefully selected by hand under sustainable farming practices. In addition, both alcoholic and malolactic fermentations occur spontaneously, which preserves varietal authenticity and the character of the terroir.
The aging process unfolds in two distinct stages. First, the wine rests for eight to ten months in a combination of French and American oak barrels, gaining structure, aromatic complexity and volume. It is then transferred into clay amphorae and submerged at a depth of 20 metres near the Ebre Delta. Here, constant pressure, stable temperature and the gentle, continuous movement of the sea create a unique environment. As a result, the wine develops a refined integration of flavours and textures without losing its freshness.
The final expression is a bright ruby red wine with a complex bouquet of ripe, almost candied red fruits, along with toasted and lightly smoky notes. On the palate, it is broad, velvety and balanced. Fresh acidity provides lift and extends the finish. Therefore, S’Àmfora Mudèfer Negre becomes a wine that links origin with innovation, depth with elegance, and time with the sea.
